Hi,
I'd like to be able to select/unselect buildings, which are visible in the building menu. This would allow switching between different categories and just use 'All Buildings' for a quicker selection.

I agree to have something similar.
My another idea is make some buildings (especially some houses like small shelters) ‘obsolete’ once a specific tech is researched.
Or a recent build tab?
Or able to bookmark the buildings you most needed?

yes! bookmark would also work nicely, just having special 'bookmarked' list :)
This I think should help for you guys (coming in v1.5.0). Now when you right-click (long press on mobile) on a building in the sidebar, you will get a context menu, where you can select Bookmark:
The option will be added to the new Bookmarks build category:
